ResponsibilitiesSupervises and coordinates production for IU
Catering and IMU Retail dining units to ensure that culinary staff
and food resources are used efficiently to provide well prepared,
delicious food that serves both retail guests and catering clients
in a professional and timely manner.Ensures all food service
production provides consistent and quality dining services to our
guests and clients.Responsible for daily catering operations
including kitchen and service staff. Develops and updates menus
often, incorporating specials, and developing and documenting
recipes and controls to ensure consistency and accurate pricing.
Creativity, not just variety, is essential in planning menus and
events for IU Catering guests and clients.Prepares samples,
arranges taste testing, collects, and summarizes data including
costing, and evaluates feasibility of placing recipe into
production. Creates standardized recipes used in the preparation of
menu items.Supervises a back-of-house culinary team to ensure
compliance with standard operating procedures to include fresh
quality food prepared and presented to all guests and clients in a
pleasant atmosphere and within budget guidelines. Supervises
service staff to ensure proper delivery of events.Supports and
serves as a resource person to the Retail Sous Chefs and Retail
Area Manager on a daily basis with a variety of personnel actions
to include hiring, promotions, transfers, vacations, disciplinary
procedures, and dismissals. Monitors and assists foods managers in
labor-management relations.Participates with IU Catering in summer
conference activities by planning menus, coordinating special
events such as picnics, box lunches for field trips, and ice cream
socials, and managing the process of scheduling and relocating
staff to ensure adequate coverage for conference events.Directs,
supervises, and trains chef de cuisines and/or production staff to
ensure quality standards of preparation in food-service areas.
Monitors work performance for accuracy and completeness to ensure
compliance with department standards and federal, state, and local
health policies.Participates in the assignment and scheduling of
employees ensuring adequate manpower to cover daily operations and
unusual peak periods. Coordinates staff schedules, including
vacations during the summer months.Inspects the quality of food and
service in each unit.Provides guidance and instructions on problems
of sanitation, maintenance, and repair of equipment. Assists in
planning for equipment replacement and renovation projects.Works
with the Catering director in the preparation of budgets and
monitoring of the budget throughout the fiscal year making labor
adjustments as necessary. Serves on a variety of committees and
represents the department at local and professional
organizations.Attends workshops, seminars and conferences to update
professional knowledge.General ResponsibilitiesManages and oversees
dining operation and activities.Trains staff in methods and
procedures of customer service, food preparation, and proper use of
equipment.Oversees staff responsible for placing food orders and
ensures the dining facility has the necessary resources and
supplies to operate effectively.Conducts regular inspections of the
kitchen, dining room, and other food service facilities to ensure
compliance with government, safety, and sanitation
requirements.Works with Food Services Leader(s) to prepare short
and long-term fiscal
